A late Sunday afternoon and there I was thinking about my dessert for dinner. A big crave chocolate and orange curd again when I go hop in the kitchen I make a pastry enhanced with orange zest, orange curd and a sort of "ganache" chocolate.
For the pastry:
250 grams of flour 125 grams of sugar
100 grams soft butter
1 egg
1 pinch of salt
zest of half an orange bio
In a bowl, mix the egg with salt and sugar
On a work surface place the flour, make a well the middle and pour egg / salt / sugar
Add soft butter and zest of half an orange
Knead well until the dough is smooth.
Lower your dough with a rolling pin
Cook one fifteen minutes at 150 degrees (you can put paper parchment so that the dough does not burn)
Chill your pie shell
For the orange curd:
150cl organic orange juice
100 grams of powdered sugar
1 tablespoon cornstarch 2 eggs
In a saucepan, put the orange juice with sugar
When the mixture becomes lukewarm add the eggs and cornstarch sifted
Leave on medium heat, not ceasing to stir with a whisk until thickened orange curd
Cool your orange curd
Crouch your background any pie with orange curd
For the "ganache"
180 of dark chocolate
15 cl cream
Melt chocolate in cream over low heat while stirring so that it does not burn
Wait until the preparation becomes warm orange curd and covered with that "ganache"
* Decorate with organic orange zest and refrigerate for at least 2 hours at the exit of fridge decorate with some icing sugar.
